Ingredients
Yield: 4 Servings
1½ cups chopped brown mushrooms
1 cup small diced yellow onions
1 cup medium diced zucchini
1, 14.5-ounce can crushed tomatoes
1, 14.5-ounce can diced tomatoes
1 small, diced jalapeños (without seeds)
1 cup canned garbanzo beans, drained and rinsed
1 cup canned red kidney beans
3 teaspoons chopped garlic
2 teaspoons chili powder
1 teaspoon ground cumin
1 1/2 teaspoons pepper flakes (for heat)
Salt & Pepper to taste
Garnish:
Sliced Avocado
Directions
Prepare a large skillet or pot, sprayed with nonstick spray or drizzled with olive oil.
Bring the skillet to medium-high heat. Add mushrooms, onion, and zucchini. Cook and stir until softened, about 8 minutes.
Add remaining ingredients and bring to a boil. Stir occasionally
Cook until veggies are tender, and flavors have developed, about 6 minutes. (Add water if necessary) season with salt and pepper to taste.
Garnish with an avocado and enjoy!
